I am thinking of getting one of these for my SAM440ep:
OCZ 60GB Vertex 3 SSD - 2.5" SATA-III - Read 550MB/s Write 495MB/s
Is it overkill?
Are there any problems with using a SSD with OS4.1?
Do I need any special setting to make it work or do I just install OS4.1upd3 on?
Will I see any speed increase compared to my 160GB SATA 7200rpm HD?

I'm using a 64Go SSD with my 440ep, no problem to repport so far.
There is a speed increase but don't expect 500mo/s as it's for SATA 3 transfert. The Sam440ep is SATA 1, slower architecture, etc. You will be lucky If you get more than 100mo/s.

So it's just a matter of installing the OS on the SSD...but is it worth it? Any faster than a 7200rpm HD?

I'm using an IDE SSD in my Micro AmigaOne, it's much faster than the 5400rpm HDD I took out. The only thing I'd say is don't use a SWAP partition as SSD have limited lifespan compared to HDD.
Anyway SSD is a great solution, very fast, quiet and low power. Even without SWAP my uA1 fly's along.
I don't think you need to go for a top spec one though, a decent mid range one will be fine. I'd love to see an SSD in my Sam440 but I've decided to sell that and just keep my uA1 now.

Yes you can have a swap partition on an SSD.

The thing is, a swap partition will likely see many more accesses per time unit than other partitions, and since SSDs supposedly have a lower life length expectancy (measured in number of accesses), it might not be a good ida to put a swap partition on it.
It's probably all theoretical anyway, as I don't think anybody has actually tried it with AmigaOS for a longer period of time. I do have a 30 GB SSD as the only HD in my Sam440ep, and it does have a swap partition, but as it is not my main Amiga, it is not being used nearly enough to be able to make any conclusions regarding life time.
